Chicken Enchilada Skillet

Ingredients
Vegetable Oil
2 Cloves of Minced Garlic
1 tsp. Ground Cumin
Salt
1 Can of Enchilada Sauce
Sour Cream
Two Whole Roasted Chickens
12 Soft Corn Tortillas cut into Quarters
1 Chopped Onion
1 Can of Black Beans, rinsed and drained
1 c. Shredded Mexican Cheese
Sliced Jalapeño, Chopped Cilantro, and Crema Mexicana Table Cream, to garnish
Instructions
Preheat oven to 500
Over medium heat preheat cast iron skillet with vegetable oil.
Add chopped onion with garlic, cumin, and a few pinches of salt cooking until onion is translucent..
Transfer the onion mixture into a large bowl.
Combine the enchilada sauce,1/4 c.of sour cream, and 1/4 c . of water to the onion mixture..
Add chicken, tortillas, and beans to the onions until thoroughly mixed together .
Spoon mixture in cast iron skillet, cooking over medium heat until warmed.
Sprinkle cheese all over and bake until golden brown.
Remove from oven adding desired garnishments.
