Chicken Enchilada Skillet

It’s time for a fiesta!!! Grab the cast iron skillet to create an amazing one pot wonder dish for your next dinner. This easy, simple recipe will definitely be a go to staple that you can modify to your preference for an amazing, Mexican themed meal. Check out the recipe below!





Ingredients

  • Vegetable Oil

  • 2 Cloves of Minced Garlic

  • 1 tsp. Ground Cumin

  • Salt

  • 1 Can of Enchilada Sauce

  • Sour Cream

  • Two Whole Roasted Chickens

  • 12 Soft Corn Tortillas cut into Quarters

  • 1 Chopped Onion

  • 1 Can of Black Beans, rinsed and drained

  • 1 c. Shredded Mexican Cheese

  • Sliced Jalapeño, Chopped Cilantro, and Crema Mexicana Table Cream, to garnish


Instructions

  • Preheat oven to 500

  • Over medium heat preheat cast iron skillet with vegetable oil.

  • Add chopped onion with garlic, cumin, and a few pinches of salt cooking until onion is translucent..

  • Transfer the onion mixture into a large bowl.

  • Combine the enchilada sauce,1/4 c.of sour cream, and 1/4 c . of water to the onion mixture..

  • Add chicken, tortillas, and beans to the onions until thoroughly mixed together .

  • Spoon mixture in cast iron skillet, cooking over medium heat until warmed.

  • Sprinkle cheese all over and bake until golden brown.

  • Remove from oven adding desired garnishments.
